The Bigatton Academy in Dubai has experienced a sig- nificant increase in its activity over the last years. This area of the world has developed at dizzying speed, with ex- ponential economic growth due to the massive invest- ments from local and international entrepreneurs, and this has led to soaring demand for traditional products that are typical of other cultures. Italian artisan gelato and patisserie are outstanding examples. With its local distributor, Polo Point International L.L.C., and its local partner Alessandro Piccin and his wife Cristina Dalla Mora, Bigatton has created a Bigatton Acad- emy in its headquarters in Dubai, open to all local en- trepreneurs who are entering the world of artisan gelato. Individually tailored courses and consultancies are con- tinually being organised across the whole region, ex- tending outwards to neighbouring countries.
