BANANA SPLIT By Alessandro Borghese Brand Ambassador of Asti and Moscato d’Asti DOCG (Savoury dish at the restaurant AB - Il lusso della semplicità in Milan) Recipe for 4 people COMPOSITION • hazelnut shortcrust pastry • peanut cream • crushed banana HAZELNUT SHORTCRUST PASTRY • butter 395 g • powdered sugar 355 g • hazelnut flour 120 g • salt 8 g • eggs 200 g • 00 flour 920 g In a planetary mixer mix the butter, hazelnut flour, sugar and a third of the 00 flour.
