A collection of typical specialities from this marvellous island, made with local products. TUMBADA Ingredients for 10 people • milk 1 l • sugar 10 tablespoons • espresso 1 demitasse cup • rum 1 demitasse cup • eggs 4 • lemon juice 1 • water 2 tablespoons In a saucepan prepare the caramel by melting six spoons of sugar with two spoons of water, stirring until dense. Pour this mixture into ten single-serving moulds. Beat the eggs with the remaining sugar, then add the lemon juice, rum, coffee at room temperature. Mix. Heat the milk then slowly drizzle it into the egg mixture. Mix well using a whisk then divide the mixture into the moulds without filling them all the way to the edge. Bake at 180°C for 30 minutes. Remove from oven and let cool, then place in the refrigerator for at least two hours before serving. The dessert can be decorated with candied orange peel. Its flavour is original thanks to the presence of coffee and amaretti cookies that makes it a mixture of sweet and bitter.
