The unique technology of Trittico’s freezing cylinder The most important and distinctive part of Trittico is the lower cylinder that contains all the expertise of Bravo’s batch freezer: a unique technology that ensures effective cold distribution to make dry, creamy, and stable artisanal gelato. The exclusive multi-point (for gas injection), and multi-ring with direct expansion (for its distribution) system, guarantees a better heat exchange and, therefore a rapid, effective, homogeneous cooling on the whole mix, even with high production per cycle. The Bravo freezing cylinder has a reduced diameter and a greater depth, to increase the freezing surface. For the same volume, the latter is 15% greater, while the inert surface is 20% less than a conventional cylinder. BRAVO 84
