97 Kaori Ito, director of Carpigiani Gelato University THE FIRST GELATO MASTER COURSE To celebrate its 20 years of training activities worldwide, Carpigiani Gelato University has decided to take its gelato courses to an even more advanced level. The “Gelato Master Course” is born. It’s dedicated to enthusiasts of the subject and professionals who wish to grasp the secrets of the physical and chemical characteristics of a perfect gelato. The course aims to delve into the physical characteristics of gelato, with a particular focus on aspects such as freezing and viscosity, providing students with adequate knowledge to manage and control them effectively. The training spans five days, totaling forty hours, divided into theory and hands-on lessons. Students can choose to attend in person at the Anzola Emilia campus (Bologna, Italy) or online, with the latter limited to twenty hours of theory. Carpigiani Gelato University (www.gelatouniversity.com) was established in 2003 as the educational division of Carpigiani, with the mission to spread the culture of Italian artisanal gelato throughout the world. Today it is internationally recognized as a breeding ground for successful gelato entrepreneurs. In 2022-2023, CGU organized 500 courses in twelve languages, for a total of 14.000 lectures in 22 countries around the world. The headquarters are located in Anzola dell’Emilia and the school has 28 satellite campuses in 27 countries around the world: Argentina, Australia, Austria, Belgium, Brazil, Bulgaria, Colombia, Chile, China, Ecuador, Germany, India, Indonesia, Japan, Malesia, Nigeria, Panama, Philippines, Poland, Romania, Singapore, South Korea, Sweden, Taiwan, United Arab Emirates, UK and USA (North Carolina and Illinois). In 2023-2024, more than 6.500 students worldwide attended Carpigiani Gelato University courses.
