COMPETITIONS According to the Chinese zodiac, 2024 was the year of the dragon. And it was precisely a gelato chef from China, Bang Gai, to earn the 2024 Procopio Cutò award at Sherbeth, an event held every year in Palermo (Sicily, Italy). The professional is the owner, together with his wife Ivy Li, of “Sette” gelato shop in Hangzhou, and he knew how to win over the jury with his flavour “Lemon Tree”. It is a creation made with Aquilaria, an ancient aromatic plant native to Asia that is used in traditional medicine and in creating fragrances. The recipe was formulated with the addition of lemon, a traditional citrus fruit from territory in which the competition is held, and a drop of Sicilian olive oil. “The idea”, commented the winner, “was to create a gelato that could unite Chinese and Sicilian traditions”.
