ICAM For all tastes and creations Icam Chocolate is a company from Lecco, Italy, that has been an interpreter and the ambassador of the excellence of Italian chocolate for over three generations. With its dedicated product categories for the Food Service market, Icam Professional and Agostoni, Icam offers to worldwide chocolate, pastry and gelato professionals a unique taste experience. The new products line includes a highly innovative range: Chocolate Nuances, chocolate chunks with a unique shape, consistency and taste, made with 100% natural ingredients. These chunks are characterized by an intense, enveloping and clean flavour. They are also baking stable at high temperatures, giving a distinctive flavour to any baked recipe: from large leavened products realized for special occasions to croissants, viennoiserie and biscuits. Moreover, with the addition of approximately 6% of extra cocoa butter these chunks could turn into a delicious chocolate couverture, suitable for various pastry, chocolate and gelato applications. This line is currently available in the flavour of pistachio, raspberry, passion fruit, blueberry and coffee and will be soon enriched with two new products: hazelnut milk and spiced milk, ideal for the cold season. The range of Icam Professional filling creams has also increased with three new products: Limonette, a cream with a delicate and sweet lemon flavour, typical of the Italian tradition, particularly suitable for fillings in pastry and chocolate creations; Caramel Cream, with a delicate and delicious caramel note, ideal as a filling but can also be used for flavouring and frosting; Zabuò, ready-to-use zabaione with the characteristic note of Marsala wine and eggs, perfect as a flavouring paste or used as it is in pastry and chocolate recipes. Finally, Choco Coco, specifically thought for the international markets, is a nutritious and rich chocolate couverture, suitable for decorations and large hollow forms. Its bitterness is predominant compared to the sweetness, but has a pleasant note of liquorice. It is suitable for pastry and chocolate for many applications: moulds, hollow forms, ganaches, mousse, pastry and gelato. 728
